  Where do I set how many days do I want the badge “NEW” to appear in the product listing?
  
  I remember seeing it in the theme settings but it is not there anymore.

  You can set for product by edit this product and scroll down to Product Detail Layout Option > New Arrival.

    The default no. of days for New Product Arrival badge is 5 days. Is it possible to change this default value to 30 Days without having to edit every product?
