1. You’re using WPML plugin so you follow this article to enable multi currency https://wpml.org/documentation/related-projects/woocommerce-multilingual/multi-currency-support-woocommerce/

2. You only can show flag or flag with language name, can’t show as only IT, EN. Could you ask support from WPML, they can help you better than us with this case

3. when you click on menu the language, my account, wishlist, search will display
