When you create variations for product you can use “Create variations from all attribute”

With the product you don’t sell you can set it as out of stock.

2. Now you’re using theme version 1.2.5 You can update theme to latest version 1.3.2 to get more features and bug fix. You can see how to update theme at http://support.janstudio.net/forums/topic/updating-the-theme/

You can disable categories thumbnail in Woocommerce > Settings > Products > Display > and follow screen shot

1. I fixed http://tokyo-de.com/shop-left-sidebar/ because you need select sidebar in Page Title Option

2. I checked your site but didn’t see you install a plugin for multilingual. We recommend install WPML plugin that will support WooCommerce better https://wpml.org/

After you install WPML i will help you insert language switcher.
