  Where do I change the Product Data info. I want to change the status of “Out of Stock” to display as ‘Out of Stock” rather than the current ‘Sold Out’

  You can use Loco Translate plugin http://support.janstudio.net/forums/topic/theme-translation/
  
  and navigate to Loco Translate > Themes > Gecko > Create new language > English (US) > System Location
  
  Find “Sold Out” and translate to “Out of stock”
