  how could i use the image sizes square instead of the rectangular version, site wide?

  Yes, You can change image to square by go to WooCommerce > Settings > Products > Display > Product Images
  
  Catalog Images: 370 x 370
  
  Single Product Image: 570 x 570
  
  Thumbnail image: 160 x 160
  
  After that go to Tools > Regenerate Thumbnails
